SWEET GARLIC SOY SALMON

This is a pretty common meal for dinner now, seeing that it's one of my brother's favorite dishes.
It's also pretty easy and cheap. Came up with the marinade one day when I craved some sort of asian-style marinated salmon & decided to get creative! Kind of threw things together so these measurement are guesstimates.


1 C Soy Sauce
2 Tbsp Honey
1 Tbsp Brown Sugar
2 Cloves of Garlic
1 Piece of Ginger (about the size of a small clove of garlic)
1/2 Lime
2 Filets of Salmon


Put the soy sauce in a large pan, add the honey and soy sauce and heat on low while stirring to melt and mix everything up.

Make sure the heat is not too high! This mixture burns easily with all that sweetness added.

Have your 2 pieces of garlic and ginger ready. I actually think 1 large clove of garlic would be fine too. Having 2 adds extra garlic-y flavor though.

I grated my garlic & ginger with uh... this thing.

Gives you super-fine, almost mashed like consistency. But.. a regular garlic crusher works for both the garlic and ginger. Or even finely diced. I've tried all three methods.

Mix it well together and heat for a few minutes. Like.... maybe 5.

While that's incorporating the garlic & ginger flavors, we can add the lime.
Take a lime, cut it in half. Seedless is great for us lazy people.

Just squeeze the juice from 1/2 the lime right into the sauce. I like to also add some of the zest by using a cheese grater.

Stir so everything is mixed up (:
Let the sauce cool a bit.

Look at that beautiful fat layering.... yum!
Grab your salmon and some container to hold it and the sauce for marinade.
This can be anything, like even a gallon ziplock bag.

I'm using a pyrex with saran wrap, making sure to flip it to get both sides marinated.
Make sure you marinade both sides at least 1 hour.

Lightly grease your pan. I'm using butter...and not lightly greasing.

Turn the stove on medium-high heat.
Heat the salmon for about 10 minutes on both sides.
This might vary depending on your salmon's cut.
Save your marinade if you want are making a side of veggies!

It should look slightly burned from the caramelized sauce on the outside. Yummmmmmm.

I toss a little more butter in that same pan and deglaze that burnt goodness. Toss in some veggies. Broccoli and string beans matched well with the dish for me, but feel free to get creative.
Add the remaining marinade too and just kinda... stir fry it (:

Voila!
I serve mine with some sticky rice, but I think mashed potatoes wouldn't be a bad alternative too.
